Cave Historique des Hospices de Strasbourg-Wine cellar of Strasbourg city hospital

The wine cave, which is situated in the medieval basements of Strasbourg's city hospital, was founded in 1395. The wines or the vineyards were donated over the centuries by the patients as a form of payment for a quality medical service.

In 1994, the cave was renovated, and today, it is a home of a specific wine museum featuring more than 40 ancient barrels, a wine press dating from beginning of the 17th century and a barrel that is still filled with the wine from the year 1472.

Regional wines include Rieslings, Tokay Pinot Gris and Gewürztraminers. Kronenbourg and Heineken are brewed in the city, but Strasbourg brews many other beers besides.

Pâté de fois gras

The making of foie gras-livers of artificially fattened geese-has become a famous industry of Strasbourg and of Toulouse, France. The product is exported to all parts of the world in several forms-the pâté; foie gras au naturel, the plain cooked livers; a sausage; and a purée. The pâté is made by cooking fresh livers, reducing them to a paste delicately seasoned with wine and aromatics and combining it with truffles and finely chopped veal.
